Pumpkin Pie-sicles

Pumpkin Pie Popsicle Recipe




If you've been following me since the beginning you know that I love winter and Aunter (see previous posts), but I feel like I completely skipped autumn. I've been getting thank you emails from Santa Claus and the Aunter Fairy, and yes she is real, but I haven't gotten a thank you letter from the Thanksgiving Turkey. I feel like karma is gonna get me sooner or later so this post I decided to make one of my favorite fall desserts, Pumpkin Pie-sicles. Delicious and so easy, all you need is some butternut squash and some love. By the way butternut squash gets it's name because it's nutty with the texture of butter. Kind of like me.



So to get started we are going to get our butternut squash. You are going to need 2 1/2 pounds of squash, and all you are going to do is cut it into quarters and scoop out the seeds. In any way, method, or mode, cook them until soft. Try not to get any color on them and although I have done this in an oven I have found it is best when you microwave it. All you want to do is get these soft, the smaller you cut the pieces the faster it is going to cook. Let it cool a little, I know it's tempting but I don't want to be liable for your burned hands. Scoop out the flesh, it should easily separate from the rind, and at this point you should have a bowl of butternut squash, When you have your squash, "squash" the squash until it resembles a mashed potato.  Add a 1/2 cup of maple syrup for that fall flavor and sweetness, 2/3 cup of light cream, which is just half-and-half, and pumpkin-pie spice, to  taste tailored to your own liking. Of course you could make your own pumpkin pie spice but it's just easier to buy it in the stores, we're pretty lazy here. Once you have this all incorporated you should have a thick butternut soup.
Pour this mixture into popsicle-stick molds, stick your popsicles in and freeze. Now don't ask me where I bought my popsicle molds because mine were a gift. But I took the extra minutes of my precious life to scour the internet to find you the best prices on molds on the internet. Or maybe amazon did that for me, but anyways here is a link for that.
Now I prefer the classic popsicle shape, but you could really freeze these in any mold you like. When you take a bite into this popsicle your teeth will just smoothly sink into those silky fall flavors. This popsicle has just enough texture to ever so slightly resist your bite, but when its in your mouth it just melts on the tongue. Although we didn't use any pumpkin in the dish, the orange tint of the squash, and those spices make it really hard to miss. So I hope you give this one a try, make this for your friends, your coworkers, the kids,  or whoever you want to see live a happy life.
